    1. These are winter white oyster mushrooms. Subtle but quite flavourful. I had two batches, one I’d ignored for a bit which became quite hard, and the other (pictured), had a more soft texture. Both were starkly different, but still nice and definitely “meatier” than flat mushrooms.
